Dressage comes from a french word meaning training, the goal of dressage is to train your horse to be able to do different motions while the rider looks as though they are doing none of the work. Dressage is an Olympic sport and is also more commonly known as "horse dancing".
The tradition of fox hunting where groups of people on horseback followed hunting dogs came to America as "hunt seat". In hunt seat, there are no dogs and no foxes, the goal of the sport is to be able to jump an arena course as flawlessly as possible. Jumps are lower to maintain elegance because the horse is judged as well as the rider.
